How to Make Napa Cabbage Soup | Cabbage Soup

March 24, 2023 by goodenoughandstuff Leave a Comment

cabbage soup with ham in a white bowl

When you want to eat something warm but not too heavy, Cabbage Soup is the best! It’s flavorful, comforting, inexpensive, and simple to make!

napa cabbage soup with ham in a white bowl

If you ever wanted something that was like eating crunchy, delicious water – this also the meal for you.

I grew up eating cabbage rolls every Easter (which I will share a recipe for soon) so cabbage has a special place in my heart.

Which makes me feel especially guilty when it goes bad in the fridge.

Don’t we just find the weirdest things to feel guilt about?

Consequently, I made up a simple soup which uses a ton of cabbage but isn’t very difficult.

The Best Carrot Cake | Easy Easter Dessert

March 16, 2023 by goodenoughandstuff 2 Comments

This is the only carrot cake recipe you’ll need to try. It’s moist, perfectly spiced, and super delicious! The topping is what I call “Cheesecake Fluff”. Light, tangy, sweet, and the perfect match for the carrot cake.

carrot cake with cheesecake fluff stacked on top of each other on a white plate

This carrot cake is so good, your kids will hang around (joking and stealing swipes of the frosting) until you’re finished taking pictures.

Then they’ll descend on it and attack it like they’ve never eaten anything in their whole life.

There was another kid just out of the shot too. This cake brings happy smiles.

Got Too Many Carrots?

I perpetually have too many carrots.

I have the same problem with broccoli.

Maybe I’ll try broccoli cake next. Life’s long enough to waste a little time making weird stuff like that sometimes.

Johnny Cakes are Cornbread Pancakes

Mostly. From what I can tell, Johnny cakes use only cornmeal. This recipe calls for half all-purpose flour and half cornmeal because using only cornmeal makes is more dense than I like.

But it’s fun to call things old-timey names.

Remember that awesome, old musical “Seven Brides for Seven Brothers“?

It’s one of the best movies. It’s one of my favorites and I highly recommend it. You can rent it HERE.

There’s a scene where all the brothers are crawling over the table and grabbing handfuls of food, stuffing their faces and filling their plates.

The oldest brother slaps what looks like a cornbread pancake onto his plate and digs in.

As the 8th child of out 10 kids, I’ve got some experience with wolfing down food like it’s about to run away.

The Best Eggless Sugar Cookies for Valentine’s Day! | Beet Dye

February 14, 2023 by goodenoughandstuff Leave a Comment

eggless sugar cookies made with beet dye

These sugar cookies are rich, flavorful, and egg-free. Use Beet Dye for the pink color or skip it and just enjoy the cookie! These are perfect cookies for Valentine’s Day!

They have a lovely flavor and a beautiful gentle pink color. Kid safe and delicious, they’re sure to be a hit!

a stack of pink, eggless sugar cookies made with beet dye

I’d like to set the record straight and say that I have nothing against regular food dye. I use it all the time and I don’t have any beef with it.

I just happen to be stuck with some beets and I noticed they’re incredibly pigmented!

In fact, it looked like a literal bloody mess all over my hands and the counter when I dug into using them up.

I figured they must good for dyeing things and I was right.

And then I did a small amount of research and my idea was not a new one.

Not that I was super surprised but isn’t it interesting to discover something that a ton of other people already know but it feels like a new idea to you?

When I was around 8 years old, I had the idea to make a baby doll that you could fill with warm water so it would be warm and heavy like a real baby.

And then a week later I saw an informercial selling that exact thing.

Weird and disappointing for a little kid.

I thought I was gonna make a ton of money off of that idea.

Why Make These Beet Dye Cookies Eggless and Edible?

Delicious Beefy Ginger Ramen Noodles | Amazing Ramen Hack

Check out this awesome Ramen Hack that packs a ton of flavor and delicious veggies. It’s an easy meal the whole family can enjoy!

beefy ginger ramen hack up close with carrots and eggs

I come from a family of 10 kids and my mom was the single provider for most of the time I was growing up.

We were a wild tribe of children who made broken doors into slides, wrote “___ was here” on everything, used the laundry chute as a short cut , and only ate certain food.

Food variety kind of goes out the door when you have 10 kids to feed on a very limited budget.

There was only a handful of savory things I liked to eat as a kid.

Some important food on that list were: deviled eggs (on Easter), saucy noodles, Ramen, cheese (which is fancy food that we didn’t get very often), and lasagna casserole (which is just a version of saucy noodles and cheese but a kid makes weird categories).

Actually we all loved eating Ramen. Little Andrew at the bottom is real focused on something 👀

What are Texas Persimmon and Where Can I Get Them?

Great questions! Txas Persimmons are big, black berries that grow in, you guessed it, Texas.

They are very sweet, not tart at all, and have a mild prune flavor.

The chocolate works so well with the persimmon because they’re nothing but sweet.

And the pulp is so inky black and thick, they already look like they should taste like chocolate.

So this recipe really delivers what my eyes are hoping for!

Check out my post all about Texas Persimmon HERE. There’s even a free printable recipe for how to make jam!
