What’s the Special Ingredient for this Rainbow Cookie Recipe?
It’s Jello!
Pick up your favorite flavor of Jello powder and mix it into my base cookie recipe. It’s that easy to make Chewy Black Cherry cookies. Or some beautiful bright pink Raspberry Cookies.
If you like tart candy and cookies. This is the dessert for you! You get the delicious comforting flavor and texture of vanilla sugar cookies mixed with bright, heavenly Spring flavors. And there’s a little bit of tartness to some of the flavors that you’d think would be weird but it works so well!
Rainbow Sugar Cookies
People will remember these cookies and be anticipating your next batch of treats eagerly.
We gave these babies out for Easter to our neighbors. My kids were super excited to tell everyone that we made them from Jello.
It was kind of funny because a couple of our neighbors thought we were selling them and politely said “no, thank you”. I was yelling from the sidewalk “They’re for Easter! They’re FREE!”
What Jello Powder Flavors Did We Try for Our Rainbow Cookies?
We tried these flavors: black cherry, raspberry, orange, lemon, lime, and berry blue.
I experimented a little with doing half one flavor and half another. It was beautiful and so good!
My favorites were the black cherry, raspberry, orange, and lemon.
If your kids like the candy nerds, try the berry blue flavor. It’s a kindred spirit of the candy.
There are so many flavors we didn’t try. I’m excited to try peach, island pineapple, and grape. Or there’s also the Jolly Rancher Jello, Sonic Jello and Starburst Jello.
If you mix and match, the possibilities are endless.
How to make the Best Rainbow Cookies
**UPDATE** I previously wrote 3 tablespoons for for the vanilla extract. That was a mistake. It was supposed to say 3 teaspoons. That is the same as 1 tablespoon so I changed it to that.
Ingredients:
- 1 stick butter, softened
- 1 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 egg
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups flour
- 1-3 ounce package of Jello powder.
- **Optional- 1/2 cup white chocolate chips**
Preheat oven to 350. Line a baking sheet with parchment paper.
Cream the sugar and butter together.
Mix in the vanilla and egg.
Mix the flour, salt, baking powder and jelllo powder together.
Add flour mixture to the butter mixture.
If you want the white chocolate chips, add them now. Not more than 1/2 a cup though because it overwhelms the Jell-O flavor.
Scoop the dough with a 1 and 1/2 tablespoon cookie scoop. Roll the dough balls in your hands to smooth the cracks.
Flatten the balls a little.
Bake at 350 for 9-11 minutes or until the cookies are just barely cracked on the top.
Let cool for 5 minutes then transwer to a wire wrack to cool completely.
Enjoy!
I do recommend trying them while they’re still a little warm but they do need time to solidify.

Rainbow Jello Cookies

- 1 stick (1/2 cup) butter, softened
- 1 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 egg
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups flour
- 1-3 oz package Jello powder
Instructions
Preheat oven to 350. Line a baking sheet with parchment paper. Cream the sugar and butter. Add vanilla and egg. In a separate bowl, mix flour, salt, baking soda, and Jello powder. Mix with butter mixture. Scoop onto the baking sheet. Roll dough balls in your hands to smooth the cracks. Give the balls room to spread. Flatten the dough with your hands a little. Bake for 9-11 minutes until the cookies just start to crack on top. Cool for 5 minutes on the pan. Transfer to a wire rack and let cool completely. Enjoy! Go share with someone 🙂
Notes
If you want to use a pudding mix instead, add 2 tablespoons of milk in with the wet ingredients.
Add 1/2 cup of white chocolate chips to kick it up a notch. I don't like to add more than that because it takes over the Jello flavor.
If you like you cookies crunchier, leave them in the oven a 3-4 minutes longer.
These cookies are best when they are eaten fresh but you can store them too. Store cooled cookies in an air-tight container on the counter for up to a week, in the fridge for up to 3 weeks, or in the freezer for up to 6 months.
