If you need comfort, make some Sweet Chili Apple Wraps.
We lost power during the Texas winter storm last month. The first thing we did when the power came back on was make this chili. There are no words to describe how nice it was to eat this chili. In a warm house, with lights to see it.

No power for 2 days. It was so incredibly cold in the house, I didn’t want to move. I kept holding my hands weird. Maybe to magically find a pocket of air that was warmer than the one I was occupying.

The whole time I kept thinking, “other states must think we’re a bunch of babies”. We lived in Idaho for a number of years. Snow covered the ground more than half the year.

We resorted to lighting a campfire in a dinky $20 BBQ in the driveway. Nathan cooked corn tortillas with ham and cheese. (so delicious I wanted to cry)
We both agreed this is the last time we’re living in a house that doesn’t have a fireplace or wood stove. Holy cow, that would have made a difference.
Easy, No Fuss Meal
I know the push these days is “made from scratch”, “organic”, “clean eating”. But I just don’t have the patience for it so much of the time. This Chili was a real pick-me-up for all of us. And it has “made-from-scratch” apples. That counts, right?

This recipe is so simple, friends. Perfect when you don’t have a lot of brain space for dinner and you’re short on time. Especially when you need something warm and cozy.

- Place 2-3 slices of apple on a tortilla with a scoop of beans.

Jessica’s Tips
- This makes a big ‘ole bowl of chili so you just need as many tortillas as your family will eat. You’ll most likely have plenty left over.
- You only need two-three apples if you are feeding a family of four.
- To store the extra chili: keep in an air-tight container in the fridge for up to a week or in the freezer for up to six months.
- You can eat this as a bowl of chili with cheese and sour cream on top. Making wraps just spreads it around more if you have lots of little mouths to feed.
- Warm the tortillas as you make the wraps. Place 3 at a time in a gallon bag and heat for 20 seconds. This makes the whole meal warm and the tortillas easier to fold.
- I always use mild everything (salsa, chili, peppers) because I have really little kids and I’m also a whimp. I can’t take the heat!

Notes
This makes a big bowl of chili. You only need two apples if you are feeding a family of four. To store the extra chili: keep in an airtight container in the fridge for up to a week, or in the freezer for up to six months.
You can eat just the chili in a bowl with a dollop of sour cream and cheddar cheese on top.
Warm the tortillas to make them easier to fold. Place 3 tortillas in a gallon zip lock bag and microwave for about 20 seconds.
These look delicious! What a great idea! Our family loves bacon-and-apple-grilled-cheese so I know we would like these!
I’m gonna have to try bacon and apple grilled cheese! That sounds so good!
This looks so interesting, I never would have thought of a chili apple combo in wraps! So glad you got through the TX cold snap. I went through one night and morning of freezing house when our furnace quit in the middle of winter (ever wear snowpants in the house?) but luckily that was before children. I would love a fireplace too!! Pinning:)
I wish we had snow pants! We bundled up as much as we could but we just weren’t prepared for that kind of cold. My kids were so excited to play in the snow but we only have those dinky, stretchy, thin gloves. They were pretty upset that they couldn’t play for more than a few minutes before their hands started hurting. That plus no place to warm up, no one really played much. Sad.
What a great idea!! I love the combo of beans and apple. So easy and delicious!!
Yes! It’s comforting and savory from the beans and the apples are crisp and fresh!
